Ada in Banana leaf




2 cups roasted rice flour (idiappam/appam flour)

1 cup grated coconut

1/4 cup melted jaggery

1 tsp jeera / elaichi powder 

Banana leaf

Salt

1 cup water


Heat kadai, add the melted jaggery, when it starts boiling add the grated coconut and jeera/elaichi powder and saute for a couple of minutes till its well blended. Keep aside.

Add salt to the water and heat it till its boiling hot, add it to the rice flour and mix with spatula. Close and keep aside for 5-10 minutes till its slightly cool. Now knead flour with hands into a smooth batter.

Wash the banana leaf, cut the central stem, wipe it clean. Slightly warm it over flame so that it becomes easy to manage.

Now take a small portion of the batter on the banana and spread it. Wet hands in water to spread smoothly. On one side of the batter add one tbsp of the jaggery-coconut mix. Fold from other side. Steam it for 5-10 minutes on medium heat. Serve hot for breakfast.
