Vegetable Pulao (white)
Basmati rice – 3 cups (1/2 kg)
Mixed vegetables (beans, carrot, cauliflower, mutter,
carrot) – 300 gms
Whole garam masalas (dalchini, lavang, pepper, cardamom,
star anise, tejpatta)
Biryani masala / garam masala – 1 tbsp
Green chillies – 5-6
Ginger-garlic paste – 2 tbsp
Onion – 1 large
Jeera – 1 tsp
Pudina – few strands
Corriander – 1 bunch
Lime juice – 1 lime
Salt
Oil
Wash rice 3 times , soak in water for 30 minutes, drain
water and keep aside.
Heat oil in kadai, add jeera. When it splutters, add whole
garam masalas and saute. Add chopped onion and ginger-garlic paste and saute.
When onion turns colour, add Pudina and coriander leaves and saute. Add biryani
masala and saute. Now add the chopped vegetables and saute for 5 minutes. Add
rice and saute for 5 minutes. Add Water (6 cups), add salt and lime juice and
let it boil. Once it boils keep flame to sim, cover lid and let it cook for
another 10 minutes. Switch off flame and keep the lid closed for another 10
minutes. Stir occasionally. Vegetable pulao is ready. Serve with raita or
paneer masala.
