Seviyan Upma
200 gm Seviyan/ Vermicelli
1 onion, chopped
3 green chillies, chopped
1/2" ginger chopped
1 carrot chopped
1/2 cup green peas
1 tbsp lime juice
2 tbsp peanuts
2 tbsp cashew nuts
1 tsp mustard seeds
1 tsp urad dal
1 tsp roasted chana
1 tsp turmeric powder
Salt
2 tbsp Oil
2 tbsp Ghee
Curry leaves
Corriander leaves, for garnish
Finely chop onions, carrots, curry leaves, ginger and keep aside.
Heat 2 tbsp ghee in kadai and roast the seviyan till it slightly changes colour. Separately boil enough water to soak the seviya. Now add the roasted seviya into the boiling water. Add salt and turmeric powder. Let it cook for 2-3 minutes. It should only be half cooked. Now drain the water and keep aside. Stir it in between.
Heat oil in kadai, add mustard seeds. When it splutters, add peanuts and saute. Add urad dal. Now add chopped ginger and saute. Add the onions, green chillies and curry leaves. When it changes colour, add cashew nuts and saute till its slightly brown. Add the vegetables (carrot, green peas) and salt and turmeric powder and let it cook. Now add the seviyan into it and mix well. Lastly add lime juice and corriander leaves and mix well. Seviyan Upma is ready.
