Karela Aloo Fry
300 gm Karela, finely chopped
2 potatoes, chopped lengthwise
1 large onion chopped
1 tsp amchur powder
1 tsp dhania powder
1 tsp red chilly powder
1 tsp garam masala
1/2 tsp sugar (optional)
1/2 tsp turmeric powder
1/2 cup oil
Salt
Finely chop the karela and wash it. Add some salt and keep aside for an hour or so. After an hour, squeeze out the water that would have formed due to salt. Heat oil in kadai, shallow fry the karela till slightly brown and keep aside.
In the same kadai, add, chopped onions along with potato and fry. Make a well in the centre of the kadai add oil and all the dry masalas and salt and saute and mix with the vegetables. Lastly add the karela and saute till well cooked. Serve as side dish to rice.
