Easy Christmas Plum Cake
Maida - 1/2 kg
Sugar - 3.5 - 4 cups
Mixed dry fruits - 1/4 kg (cashew, badam, raisins, walnuts)
Dates - 200 gm
Tutti frutty - 150 gm
Candied Cherry - 150 gm
Butter - 250 gm
Eggs - 6
Baking powder - 1 tbsp
Baking soda - 1 tsp
Vanilla essence - 1 tbsp
Lemon zest - 1 tbsp
Orange rind of one 🍊, finely chopped
Cloves - 2
Dry ginger powder - 1/2 tsp
Cinnamon powder - 1 tsp
Elaichi powder - 1 tsp
Salt - 1/4 tsp
Fresh cream - 1 cup
Milk - 1/2 cup (optional)
Lime juice - 1 tsp (optional)
Dark rum/wine - 1 cup (optional)
Powder 1/2 cup sugar along with cloves, cinnamon and elaichi (if you dont have these powders).
Heat 3 cups water and keep aside.
In a pan, heat 3 cups sugar till it caramalise. Switch off flame and slowly add the hot water little by little (else it will splash). Switch on the flame and let this caramel water boil for few minutes. Now add all the nuts and lemon and orange rind into it. Add butter. Let it cook for another 5 minutes. Lastly, add, dates, cherry and tutti frutty and mix well, let it cook for another 5 minutes. Switch off flame. Let it cool.
Beat eggs and add to the cooled caramel mixture. Add powdered sugar (containing cloves, elaichi and cinnamon) and dry ginger powder. Add cream.
Sift maida with baking powder and baking soda. Slowly add the maida into the caramel mix and blend. Add vanilla essence and salt. Add lime juice (optional). If adding rum, add now or it can also be poured on the cake after the cake is ready.
If the batter is too thick, add some milk to adjust consistency. This cake needs a thick batter.
Now bake for 45 minutes at 180 degrees.
Note: All ingredients should be in room temperature
