Stuffed banana pancake

3 cups maida

1.5 cup rice flour

5 eggs

1 cup grated coconut

5 well riped Nendra Pazhyam (Large kerala banana)

1 tsp jeera

1-2 cups milk

1/4th tsp salt

Ghee

Sugar

Salt

In a mixie blend eggs, 2 tbsp sugar, maida, milk and rice flour. It can be done by hand also in a bowl. If batter is thick, add some water and make consistency of dosa. Add salt and keep aside.

Chop the bananas very fine. In a non-stick pan, add some ghee and slightly roast the coconut, along with jeera and 2-3 tbsp sugar. Keep aside. Now in the same pan, add some more ghee and roast the banana with 1 tbsp sugar till they become slightly soft. Now mix both the banana and coconut mixture.

In a non-stick pan, brush some ghee or oil, spread a 1-2 ladle full of batter to cover the entire pan. Cook on one side and then flip and cook on the other side. Turn again and add the banana mixture in the centre and cover from both sides. Press slightly. When done cut into pieces and serve for breakfast.
