Basbousa (Egyptian Semolina cake)
2 cups fine rava
2 cups maida
2 cups dessicated coconut
2 cups granulated sugar
2 cups milk
2 cups oil
3 eggs, beaten
1 tbsp baking powder
1 tbsp vanilla essence
2-3 tbsp of split badams
¼ tsp salt
All ingredients should be in room temperature.
Make sugar syrup with one cup water and keep aside.
Beat eggs, add 1 cup sugar and all the other ingredients and
mix well to make a thick batter. Add more milk if needed. Let it rest for 10-15
minutes. Decorate with badams.
Bake for 40 minutes under 180 degrees in oven or in kadai
under low flame.
Pour the sugar syrup over the hot cake and let it absorb well
in the cake. Once the cake is cooled, cut and serve.
