Palak Chilla (serves 4)
1 bunch palak (200 gms)
1/2 cup rava
1 cup wheat atta
1 cup besan
¼ cup coriander leaves
1 Onion
1-2 tomatoes
1 Capsicum
3-4 green chillies
1” ginger
4-5 garlic
1 tsp ajwain
3-4 cubs Cheese (optional)
1 tsp Oregano (only if adding cheese)
1-2 eggs (optional)
Salt
Turmeric powder
1 tsp cumin
½ tsp pepper powder
Finely chop all the vegetables and keep aside.
Wash and cut the palak leaves (discard the stem). Add Rava and mix with hand to absorb in the palak leaves. Add the besan and mix again. Now add the atta and enough water and blend to form a thick batter. Add salt and all other ingredients and blend well. Add more water if needed. Keep aside for 15-20 minutes.
Brush oil or ghee on tawa and spread a ladle of the batter. Cook on one side. Brush some oil or ghee on top. Flip and cook on the other side. If adding cheese, flip again and sprinkle cheese and cook for some more time. Serve with tomato ketchup.
