Egg, oats, and vegetable omelette
2 cup oats
1 cup besan (optional)
3-4 eggs
2 cups milk
2 cup vegetables, finely chopped (cabbage, capsicum, carrot, beetroot)
2 tomatoes, finely chopped
1 onion, finely chopped
1/2" ginger, chopped
3-4 green chillies, chopped
1/4 tsp garam masala powder
1/4 tsp jeera powder
1/4 tsp pepper powder
Corriander leaves
Salt
Oil
Roast oats and powder it. Add milk and keep aside. Add besan and mix. Add water if needed
Finely chop all the vegetables (or coarsely grind in mixie). Add into the oats batter. Add all other ingredients and mix well. Now beat eggs and add into the mixture. Add salt and 1 tbsp oil.
Heat tawa, brush some oil and pour one ladle of the mixture. Cover and cook for 10-2 minutes. Open lid, brush some oil or ghee and flip to other side and cook the other side as well. It can also be made in appam mould. Serve hot with tomato sauce or any chutney/sauce.
