Egg and Veggies Omelette
¼ kg Cabbage
1-2 carrots (grated)
100 gm mushroom
3-4 eggs
2 cups powdered oats
½ cup besan (optional)
3-4 Green chillies
½” Ginger
Coriander leaves
1 Onion
1-2 Tomatoes
1/4th tsp garam masala powder (optional)
Salt
1 tsp Pepper powder
Oil.
Finely chop all the veggies.
Heat oil in kadai, saute ginger and green chillies, add onions and saute till it changes colour. Add the vegetables, salt and cook till done. Let it cool.
Add the oats flour and besan in a bowl, add some water to make a thick paste. Add salt and keep aside for 15-20 minutes.
Beat eggs, add some salt, pepper powder and garam masala and keep aside.
Once the veggies are cooled, add the oats batter and eggs into it and mix well. Add coriander leaves. Batter should be thick. Add water if necessary.
Heat tava, spread one ladle of the batter. Cover and cook on one side. Brush some oil on top and flip and cook the other side. Cut and serve with tomato ketchup.
Note : Same recipe can be made with Mushroom and capsicum.
