Sabudana Khichdi
(serves 4)
1/4 kg sabudana
2 large potatoes
100 gm roasted peanuts
1 tbsp finely chopped ginger
2-3
tbsp raw peanuts
1 onion
1 tsp jeera
2-3 green chillies
Kadipatta
Lime juice - 1 tbsp
2-3 tbsp sugar
Coriander leaves
Oil / Ghee
Rinse sabudana in water (2-3 times with soft hands) to remove excess starch. Add water and soak
overnight. Water level should be just above the sabudana. Alternatively, roast sabudana for 1-2 minutes and then wash it before soaking. This will not make it sticky.
Cut potato into small cubes, keep aside.
Coarsely grind the roasted peanuts in mixie. Mix it with sabudana along with
salt and, 1-2 tsbp sugar, keep aside.
Heat oil or ghee in kadai. Add jeera, grated ginger, saute. Add 1-2 tbsp raw peanuts and saute. Add potatoes, salt and saute till potatoes are cooked. Add onion, green chilli, kadipatta, saute. Now add the sabudana and blend it well , saute for a minute. Close lid and keep on low flame for 5 minutes. Switch off flame and let it cook it its own heat for another 2-3 minutes. Add coriander leaves, sugar and lime juice and mix well. Sabudana khichdi is ready. 😊
