Vegetable Cheese triangles
(Serves 5)
For the dough:
2 cups wheat atta
2 tbsp – besan
2 tbsp – rava
Salt
½ tsp Ajwain
2 tbsp coriander leaves
1 tbsp ghee
Mix all the above ingredients (crush the ajwain with hand and add), add water and make soft dough.
For the stuffing
1 capsicum, finely chopped
2 carrots, grated
3 potatoes grated
1 cup mutter
1 tbsp Oil
1 tsp Jeera
¼ tsp hing powder
2-3 Green chillies, finely chopped
½” Ginger grated
1 onion, finely chopped
½ tsp, haldi powder
½ tsp dhania powder
1/4 tsp jeera powder
½ tsp garam masala powder
½ tsp pepper powder
½ tsp amchur powder
½ tsp kasuri methi
1 tomato finely chopped (seedless)
1 tsp pepper powder
4-5 cubes grated cheese
Heat oil in kadai, add jeera and hing powder and saute. Add ginger, saute. Add green chillies and onion and saute. Add tomatoes and saute. Now add the powdered masalas and saute. Now add all the vegetables, salt and saute. Cook openly so that the vegetables is dry. Add kasuri methi and amchur powder. Add coriander leaves and mix well. Keep aside the cooked stuffing.
Make small rotis with the dough, add the stuffing in triangular shape. Add grated cheese over it. Fold the roti in triangle shape.
Heat tawa, spread some ghee and cook the stuffed roti on medium flame. Add Serve with tomato ketchup or curd.
