Medu Vada
2 cups urad dal
3-4 green chillies
1/2" ginger
1-2 sprigs curry leaves
1/2 tsp crushed pepper (optional)
Salt
Oil
Soak urad dal in water for 3-4 hours. Grind to a thick coarse paste. Add very little water. Add chopped chillies, ginger, curry leaves, pepper powder and salt. Beat the batter with hand for 5 minutes to make it fluffy.
Heat oil in kadai, wet your hands and take a small portion of the batter and dip into oil. Make hole with thumb while dropping the batter into oil. Fry on both sides. Serve hot with Sambar and/or chutney. Enjoy as breakfast or evening snacks.
