Vegetable Fried Rice
3 cups cooked rice2 spring onions, chopped2 cloves garlic, chopped1” ginger, chopped1 cup carrots, finely chopped1 cup beans, finely chopped1 capsicum, chopped1 tbsp soy sauce1 egg, lightly beaten (optional)3 cups cooked rice2 tbsp finely diced spring onions3 tbsp soy sauce1 tbsp vinegar¼ tsp ajinomoto (optional)1/4 tsp. ground ginger2 tbsp chilli sauce1 tbsp Fresh ground black pepper1/2 cup oilStir fry the onion, garlic & ginger in 2 tsp. oil for 1 minute.Add the remaining vegetablesAdd soya sauce, chilli sauce, pepper powder, vinegar, ajinomoto.Stir fry 5 minutes or until the vegetables are still crisp but tender.Add the rice, breaking it up and dispensing it evenly in the pan.In a separate pan, break egg add salt and pepper powder and fry it, breaking it into small pieces as it cooks. Add this into rice.Garnish with the spring onions.
