Chicken Fried Rice
1/2 kg Basmati rice
250gm boneless chicken
2 eggs
1/2 cup carrot, finely chopped
1/2 cup capsicum, finely chopped
1/2 cup green peas (optional)
1/2 cup french beans, finely chopped
1 cup spring onions chopped
2 tablespoons of ginger-garlic paste
5-6 green chillies, finely chopped
1 tsp pepper powder
1 tbsp white vinegar
1/2 cup soya sauce
1/2 cup soya sauce
2 tbsp Green chilli sauce
1 cup oil
Cook the rice (90%) and keep aside. Salt should be added while cooking.
Marinate chicken with salt, 1 tsp soya sauce, ginger-garlic paste and 1 tbsp cornflour.
In a pan, add some oil, 1/4 tsp ginger-garlic paste and saute, add eggs, salt and pepper powder and cook, stirring continuously so that it gets scrambled well. keep aside.
Cut the spring onions. Keep the white and green parts separate.
In the same pan, add some oil and cook the chicken and keep aside.
In a large pan, heat 2 tbsp oil, add ginger-garlic paste and saute. Now add the white part of the spring onion and saute. Add all the vegetables and saute. Add salt, pepper powder, 2-3 tbsp soya sauce and vinegar and saute till half cooked. Add the cooked chicken and saute for 2-3 minutes. Add spring onion greens and saute. Now add the cooked rice and mix well. Delicious Chicken fried rice is ready. Serve hot.
