Tomato Rice
1/4 kg cooked rice
2 tbsp chana dal
2 tbsp urad dal
1 tbsp whole red
chilly
1 tsp red chilly
powder
2 tbsp mint-chopped
2 tbsp coriander-chopped
2 tbsp mint-chopped
2 tbsp coriander-chopped
2 tbsp ghee or oil
¼ tsp cinnamon-broken
4 cloves
½ cup onions-chopped
¼ tsp cinnamon-broken
4 cloves
½ cup onions-chopped
2 tsp ginger-garlic
2 cups tomato puree (5-6 🍅)
1/4 tsp turmeric powder
2 cups tomato puree (5-6 🍅)
1/4 tsp turmeric powder
Corriander leaves for garnish
1 tsp mustard

Heat
ghee/oil, add mustard; when it crackles, add cinnamon, cloves. Add chana dal and urad
dal. Add the onions and ginger garlic paste and sauté till onions are a light
brown. Add the tomato puree and sauté till fat separates. Add red chilly powder, turmeric powder and salt, turn around a few times. Add the cooked rice,
mint and coriander. Blend it well with the masalas. Tomato rice is ready. Serve with pickle.
Note: This can also be made with uncooked rice, in which case just add the uncooked rice once the tomatoes are cooked. Add water (1 cup rice = 2 cups water) and cook till done.
