Tomato Rice

1/4 kg cooked rice
2 tbsp chana dal
2 tbsp urad dal
1 tbsp whole red chilly
1 tsp dhania powder
1 tsp red chilly powder
2 tbsp mint-chopped
2 tbsp coriander-chopped
2 tbsp ghee or oil
¼ tsp cinnamon-broken
4 cloves
½ cup onions-chopped
2 tsp ginger-garlic
1 cup tomato puree (3 tomatoes 🍅)
2 tomatoes - chopped
1/4 tsp turmeric powder
Corriander leaves for garnish
Hing powder - 1/4 tsp
1 tsp mustard
Salt

Heat ghee/oil, add mustard; when it crackles, add cinnamon, cloves. Add chana dal and urad dal. Add the onions and ginger garlic paste , hing powder and sauté till onions are a light brown. Add the chopped tomatoes and cook till soft. Add tomato puree and sauté till fat separates. Add red chilly powder, turmeric powder, garam masala powder and salt, turn around a few times. Add the cooked rice, mint and coriander leaves. Blend it well with the masalas. Tomato rice is ready. Serve with pickle.

Note: This can also be made with uncooked bas6mati rice, in which case just add the uncooked rice once the tomatoes are cooked. Add water (1 cup rice = 2 cups water) and cook till done.
