Olan
1/2 kg white pumpkin or Wellerika, thinly sliced
1 coconut
3-4 green chillies
Curry leaves
1 tbsp coconut oil
Salt
Extract milk from coconut. Keep first & second milk separately. Cook pumpkin in the second milk with some salt, curry leaves and green chillies. When done, add first milk. Let it simmer on low fire for some time. Remove from fire and add one spoon coconut oil.
If the gravy is thin, add 1 tbsp rice flour and let it simmer for sometime.
Note: Same recipe can be made with potato+onions or with padwal.
Instant Olan with Coconut Milk powder: Cook pumpkin in water, salt, green chillies. Add curry leaves. Take one cup coconut milk powder, add some water to make batter. Add it to the cooked Pumpkin and let it simmer for some time. Garnish with coconut oil.
