Mango Pickle
1 kg raw mangoes
2 tbsp mustard dal
1 cup vinegar
10 green chillies
5 tbsp red chilly powder
1 tbsp methi-hing powder
1/2 tsp turmeric powder
1 pod garlic
1” ginger, chopped
1 tsp turmeric powder
2-3 whole red chillies.
1 cup Til oil.
4 tbsp salt
Cut mangoes. Add salt
and keep for 2-3 days, preferably under the sun.
Heat 1/2 cup oil and keep
aside.
Now, in a kadai, heat 1/2 cup oil. Add chopped garlic and saute till slightly brown. Now add the ginger and saute till its slightly cooked. Add whole red chillies, chopped green chilies and saute till well cooked. Lower the flame, add chilly powder, turmeric powder, 1 tsp salt and methi-hing powder. Saute for few minutes. Remove from flame. Add mangoes and vinegar and mustard dal. Mix well. Bottle the
pickle and add the remaining oil on top of it.
