Lime Pickle
1kg Lime (24 lime)
100 gm chilli pdr
2 tsp turmeric pdr
6 tsp salt
100 gm Til oil
2 pods garlic (cut
lengthwise)
2” ginger (cut
lengthwise)
2 tsp Methi &
hing powder
50 gms Mustard dal
½ cup vinegar
20 green chillies, slit
1 tsp mustard
Heat
whole lime in 3 tsp oil for 10 minutes on slow fire. Keep aside. Cut each lime
into 4 pcs. Add salt and mix well.
Heat
3 spoon oil. Add mustard. When it crackles, add green chillies, ginger, garlic
and fry till garlic turns brown. Reduce
heat and add chilli powder and turmeric pdr, mix well and remove from fire. Add
vinegar, mix well. Add lime & mustard dal, hing and methi pdr. Mix well.
Bottle the pickle and put oil on top.
For
Mango pickle: cut mangoes, add salt and keep for 3 days, then follow same
procedure.
