Brinjal (small green ones) – ½ kg
Ginger-garlic chopped
2 onions
3 green chillies,
½ tsp red chilli pdr
3 tomatoes chopped
2 tomatoes pureed
Garam masala pdr
Jeera pdr
Dhania pdr
Jeera
Rai
Salt, turmeric, curry leaves
Corriander leaves & badam powder for garnish.
Chop brinjal into halves; shallow fry in oil for sometime.
Make paste of onions, ginger-garlic, & green chilles.
In kadai heat oil, crackle jeera and rai. Add above paste and sauté for sometime. Add tomato, red chilli pdr, dhania powder, garam masala pdr, jeera pdr & tomato puree. Add, salt, haldi and curry patta, sauté till well cooked. Now add the fried brinjal into it and cook on slow fire for some time. Garnish with coriander leaves and badam powder (roast badam and make powder of it). Serve with chapattis.
