Purple Brinjal vegetable
1 kg large purple bringal
1 tsp jeera
3 tomatoes
2 onions
1 tsp jeera pdr
1 tsp garam masala pdr
½ tsp hing pdr
1 tsp red chilly pdr
1 tbsp red chilly sauce
1 tbsp finely chopped garlic
1 tbsp finely chopped ginger
½ tsp amchur pdr
Curry leaves
Corriander leaves
1 tsp turmeric pdr
Salt
Oil
Cut bringal into cubes after removing its skin.
Heat oil. Add jeera. After it crackles, hing pdr, add garlic and saute. Then add ginger and saute. Add onions. When its slightly brown add all the remaining masalas and red chilly sauce and saute. Then add tomatoes and curry leaves. When tomatoes are cooked, add the bringal and mix well. Let it cook on medium heat till done. Garnish with coriander leaves.
