Kerala Chicken (Dry)
1 Kg Chicken
Ginger-garlic paste – 1 tbsp
Red chilly pdr 2 tbsp
Dhania pdr – 2 tbsp
Saunf – ½ tsp
1 large onion, chopped lengthwise
Turmeric pdr 1 tsp
Garam masala pdr – 1 tsp (or whole garam masala)
Salt as per taste
Small madras onions, finely cut – 3-4
Coconut pieces (optional)
Coconut oil – 2 tbsp
Clean chicken and cut into small pcs. Apply salt, turmeric and ginger-garlic paste, 1 spoon coconut oil and keep aside. Roast all the dry masalas and powder it and add it to the chicken and marinate for about 1-2 hours. Also add the chopped onion into the marinade.
In a kadai, put 2 spoons coconut oil, fry coconut pieces & small onions till golden brown. Add the chicken, mix well, cover and cook on medium heat. Do not add water. Once cooked, lower heat and remove lid and cook on slow fire till all the water, if any, is evaporated and chicken is completely dry.
Now garnish with corriander leaves and serve hot as a side dish with rice and sambar.
