Chicken Cafreal (Goan)
1 kg chicken legs
1 tsp cumin seeds
1 tsp black peppercorns
1 tsp cloves
1 inch cinnamon
2 tsp poppy seeds
1 tsp turmeric pdr
1/4th cup coconut vinegar or any vinegar
8 cloves of garlic
1 inch ginger
4 large green chillies
1 large bunch coriander leaves
1 inch piece tamarind soaked in water

Oil
Roast the whole spices together in a dry pan and let it cool. Grind to a fine powder.
In a food processor, add vinegar, green chillies, garlic, ginger, coriander leaves, soaked tamarind, turmeric, salt and some water and make a fine paste.
Make cuts on the chicken pieces and pour the above paste and leave to marinate a few hours (preferably overnight). Shallow fry on all sides and bake in oven for 30 minutes.
