 Sweet Corn Appam

(Serves 5)

400 gm sweetcorn

3 cups besan

2 cups rava

1 capsicum

1 carrot

1 onion

1 tomato (optional)

1” ginger

5-6 green chillies

Corriander leaves

1 tbsp Oregano (optional)

1 tsp Chaat masala

Oil

Salt

Baking soda (optional)

Tomato ketchup/green chutney

Take half quantity of the sweetcorn (200 gm) and coarsely grind in mixie.

Chop all the vegetables.

In a mixing bowl add the besan, rava, ground corn and balance whole corn and all the other ingredients and mix well with hand (do not add water). Add 2-3 tbsp oil and salt. Keep aside for 10-15 minutes for the rava and besan to soak in the veggies. Add baking soda and mix. If the batter is too thick now, add 1-2 tbsp of water and mix well.

Heat appam mould (or tava) and brush some oil. Pour the batter and cook on one side. Brush some oil on top and flip to other side and cook on other side as well. Corn appam is ready. Serve hot with tomato ketchup or green chutney.
