Bhindi Aloo
750 gm Bhindi
1/4 kg Aloo (potato)
2 large onions
1 tbsp ginger-garlic paste
1 tbsp dhania powder
1 tbsp red chilli powder
1 tbsp amchur powder
1 tsp turmeric powder
1 tsp jeera powder
1 tbsp kasuri methi
2 tomato (optional)
1 cup oil
Salt
Wash and dry the bhindi and chop into 1" pieces. Chop and slice potatoes into long slices.
Chop onions into thick slices.
Heat oil in kadai and fry potatoes. Add some salt and let it cook. Keep aside. In the same oil, add the bhindi, add some salt and fry it. Keep stirring till done and keep aside.
Heat oil in Kadai, add jeera and let it splutter. Add ginger garlic paste and saute. Now add the onions and saute till it is translucent. Add tomato (optional). add all the dry masalas and saute. Now add the fried bhindi and aloo and mix well. Saute for another 5 minutes. Lastly, crush kasuri methi and add to it. Serve with roti.
