 Arbi Fry

 1 kg Arbi (chembu)

1 tsp rai

1 tsp ajwain

1 tsp jeera

1/4th tsp hing powder

½ tsp haldi powder

2 green chillies, chopped

½” ginger, chopped

3-4 cloves garlic, chopped

1 tsp red chilly powder

1 tsp dhania powder

Curry leaves (optional)

Coriander leaves

2 tbsp oil

 

Cook arbi in cooker for 1 whistle. Drain water and let it cool. Remove skin and chop the arbi

Heat oil in kadai, add mustard seeds, jeera and ajwain. Let it splutter. Add hing powder, garlic and saute. Add green chillies and ginger. Saute. Add curry leaves.

Add dhania powder, chilly powder, turmeric and salt. Saute. Add the cooked arbi and saute. Let it cook on low flame for another 5 minutes. Garnish with coriander leaves. Serve with rotis.
