Corn Capsicum veg

½ kg corn, boiled
100 gm sweet potato or mushroom (optional)
¼ kg capsicum / paneer
2 onions
4 tomatoes
4-5 cashew nuts
½ tsp Garam masala pdr
½ tbsp Dhania pdr
1 tsp Red chilli pdr
1 ts jeera pdr
½ tsp pepper pdr
Ginger garlic paste
Salt, turmeric
Kasoori methi
Coriander leaves
2-3 tbsp fresh cream or curd

Roughly chop onions and tomato, add cashew nuts and 1-2 cups water and let it cook. Cool it and make a paste of it and keep aside.

Boil corn along with sweet potato in cooker for 2 whistles and keep aside.

Heat oil in kadai and add the ginger garlic paste. When brown add dhania pdr, red chilli pdr, garam masala, jeera pdr, salt and turmeric and saute. Now add capsicum/ mushroom and saute for 5 minutes. Add the ground masala and let it cook for some time. Now add the corn and let it simmer. Add kasuri methi and coriander leaves. Lastly add cream/curd and let it simmer for some time. Serve with roti.
