Coconut Cake


2 cups maida

1½ cups fresh/dessicated coconut

5 eggs (beaten)

1½ Sugar (powdered)

1 tsp vanilla essence

½ cup Rawa

1 cup butter

1½ tsp baking powder

½ tsp Elaichi powder


Beat sugar with butter for 5-10 minutes till its creamy.

Sieve maida, rawa and baking powder together. Add beaten eggs and slowly blend it. Then add sugar+butter and slowly fold into the mixture. Stir the mixture in one direction only so that the air bubbles formed while stirring do not break.  Now add coconut and vanilla essence. Mix well.


Grease baking tray with butter and dust with maida or put butter paper. Add batter and bake at 180 deg. For around 45 minutes. Serve hot or cold.
