Puran Poli
Puran Poli(makes 30 polis)1/2 kg chana dal1/2 kg jaggery1/2 kg maida1 cup Atta1 tsp cardamom powder1 tsp soot (dry ginger pdr) (optional)1 tsp nutmeg pdr (optional)1/4 tsp turmeric powderGhee, as requiredSoak Chana dal for 1-2 hrs or overnight. Cook dal in cooker (4-5 whistles). Drain excess water.Heat kadai. Add this chana dal along with jaggery and keep stirring till it is well cooked (atleast 30 minutes on low flame) and moisture is evaporated. Add cardamom powder, soot pdr & nutmeg pdr. To check whether its done, dip a spoon into it, it should stand straight. If not, continue stirring for some more time. Cool it. Now sieve it in a metal sieve to get a smooth dough. Alternately, grind it into a smooth dough in mixie or mash it smooth with a potato masher.In a bowl take atta and maida. Add salt, a pinch of turmeric powder, water and 3-4 tbsp ghee to the atta/maida and make a very soft dough. Now make rotis of the atta, put a small ball of chana dal mix (puran) into it and press it properly so that the stuffing spreads evenly. Now roll it to make puran poli. The quantity of the puran should be more that the atta.Heat tawa (keep flame high) and cook the poli for 3-4 seconds and flip on other side. Again cook for 3-4 seconds and flip. Apply ghee on both sides of the poli to make it soft. Serve hot.
