Poha
1 onion, chopped fine
1 potato, finely chopped
1 carrot, finely chopped
2 green chillies
1 spoon sugar
1 tsp mustard
1 strand curry leaves, chopped
½” ginger, grated
1 tsp turmeric pdr
2 tbsp coconut, grated
1 tsp chana dal
2 tbsp pea nuts
3 spoon oil
Corriander leaves, for garnish
Wash poha and soak in water for 5 minutes. Drain and keep aside. Lightly separate the grains with spoon so they don't stick together.
Heat oil in kadai, add mustard. When it crackles, add peanuts and sauté for sometime. Now add chana dal & ginger and sauté. When it’s brown add potato. When they are cooked, add all the remaining ingredients and sauté well. Add the soaked poha and lightly mix. Cook on slow fire for another 2 minutes. Garnish with coconut and corriander leaves. Serve hot.
