Rava Carrot Kozhukatta
(serves 3)
Rava – 1 cup (200 gms)
Carrot – 2 (100 gms)
Coconut – 1 cup
Jaggery – ½ cup
Jeera / elaichi powder – 1 tsp
Salt – 1 tsp
Ghee
Heat 2 cups water, add salt, 1 tsp ghee and let it boil. Slowly add the rawa and let it cook till it forms a soft dough. Cover and keep aside.
For filling:
Grate carrots and keep aside.
In a kadai, add 1 tbsp ghee and cook half the carrot till it becomes slightly soft. Add the grated coconut and saute. Add jaggery and saute till the mixture becomes soft. Add jeera or elaichi powder. Keep aside.
Add
the balance grated carrot to the Rava dough and mix well. Make small balls. Take
each ball and press to make a hollow; add 1 tbsp of the filling and close the
balls.
Apply ghee or oil in a plate and place the balls. Keep space between the balls as they will expand after getting cooked.
Heat water and steam the balls for 15 minutes. Delicious carrot kozhukatta is
ready.
