Egg Bites

Egg Bites (serves 3)

4 Eggs

3 tbsp Oats (optional)

1 tomato, chopped

1 Onion, finely chopped

1 Capsicum/1 cup chopped cabbage

1 Carrot grated

Corriander leaves

Green chillies - 3

Ginger, grated - 1/2 tsp

Turmeric powder (optional)

1/4 tsp Garam masala powder (optional)

1/4 tsp Jeera powder (optional)

Salt, Oil


This can be prepared with or without oats. Oats adds volume  to the batter and is healthy too. If adding oats, dry roast it and powder in mixie. Add 1/2 cup milk in it and mix well. Keep aside for 10-15 minutes.

Break eggs. Add all the other ingredients and oats. Mix well to make a thick batter. 

Heat Appam mould or tawa. Brush little oil and add the batter. Cover and cook. Flip and turn to other side and cook till done. Serve with tomato sauce. This can be had as breakfast or evening snacks.
