Potato vegetable
1/2 kg potatoes, cubed
2 onions, chopped
2 tomatoes, chopped
Green chillies chillies – 4
Ginger – garlic, finely chopped
Mustard seeds – ½ tsp
Jeera – ½ tsp
Hing pdr - ½ tsp
Jeera pdr – ½ tsp
Salt, turmeric
Corriander leaves, for garnishing
Cook potatoes with 2 cups water, salt & turmeric and keep aside.
Heat oil in kadai, add mustard seeds and jeera. When they crackle, add hing pdr, ginger-garlic and saute well. Now add onions and saute till golden brown. Add tomatoes, and cook well. Add jeera pdr. Add cooked potatoes and mix well.
Garnish with corriander leaves.
Serve hot with rotis.
