Mango curry


Mango curry 

3 raw mangoes
20 green chillies, chopped
4 tsp red chilli powder
½ tsp turmeric powder
2 tsp methi and hing(fried and powdered)
2 tbsp white vinegar
1” ginger, chopped
1 pod garlic, chopped lengthwise
1 tbsp salt
1/2 tsp turmeric powder
3 cups hot water

For seasoning

Mustard, methi, red chilli pcs, curry leaves, 1 cup coconut oil

Wash  and chop mangoes into small pcs. Add salt and keep aside for an hour. 

Heat oil in kadai. Season with mustard, methi, red chillies & curry leaves. Add garlic and saute till its light brown, now add ginger and green chillies and sauté for some time. Add red chilli powder, & turmeric powder. Mix well. Add mango pieces and vinegar. Add the hot water and let it simmer for 1-2 minutes. Add methi-hing powder. Do not cook. Remove from fire and mix well. Store in containers.
