Egg Capsicum
4 eggs
2 capsicums
2 onions
2 green chillies
1 tomato
1 tsp turmeric powder
1 tsp garam masala powder
1 tsp chaat masala powder
½ tsp black pepper pdr
½ cup oil, salt
Ginger-garlic paste
Coriander leaves
Boil eggs and remove their shells. Heat oil in frying pan and fry the eggs till golden brown. Keep aside.
Cut capsicums into 1” pieces. Cut onions and tomatoes into long thick slices. Chop green chillies finely.
Heat oil, add ginger-garlic paste, green chillies, onions and capsicum. Add garam masala, salt, turmeric powder. Fry till medium tender, then add sliced tomatoes.
Cut eggs into 4 long pcs. sprinkle salt, pepper powder and chaat msala over the eggs, adjusting to the salt already added to the capsicum. When capsicum is done, and has blended well with tomatoes and onions, remove from fire. Garnish with corriander leaves.
Serve hot with puris, parathas or chapaties.
