Carrot cake
1 kg red carrots, grated
Sugar – 2 cups
Rava – 1 cup
Maida – 5 cups
Baking powder – 2 tsp
Baking soda – 1 tsp
Vanila essence – 1 tsp
Mixed nuts/tutti frutti – 1 cup (optional)
Ghee – 1 tbsp
Oil – 1 cup
Condensed milk – 1 cup
Milk – ½ cup optional
In a kadai, heat ghee and cook carrots for 2-3 minutes. Add 1 cup sugar and saute and cook for 5 minutes. Keep aside and let it cool.
In a mixing bowl, add the condensed milk, oil and 1 cup
sugar and mix well. Add the dry ingredients and mix well. Now add the cooled
Carrots mix and blend well. Bake for 30-35 minutes at 180 degrees. Delicious
carrot cake is ready.
