½ kg mixed vegetables, cut lengthwise
(Suran, red pumpkin potatoes, banana, carrot, beans, drumstick, chawli, gawar)
6-7 small onions
1” ginger
4-5 green chillies
1 grated coconut
½ tsp jeera
Salt, curry leaves,
½ cup curd
2 tbsp Coconut oil
Cook suran with little water and salt. When its half-cooked, add remaining vegetables. Crush small onions & ginger and add to the vegetables. Add curry leaves.
Grind coconut with jeera, green chilies and some small onions, into a coarse paste.
When veggies are cooked, add ½ cup curd and then add coconut paste. Mix well and remove from heat. Season by adding coconut oil. Mix well.
