Egg Cubes curry
5 eggs
1 tbsp red chilly pdr
½ cup grated coconut
4-5 cashew paste
2-3 tomato puree
2 tomatoes, chopped
2 large onions, chopped
Curry leaves
1 tbsp Ginger-garlic paste
Salt, turmeric, pepper powder
Garam masala pdr
Coriander leaves
Beat eggs, add salt, 1/2 tbsp ginger-garlic paste and pepper powder. Pour into a vessel (greased with oil) and steam it for 10 minutes in cooker. It will get set. De-mould it and cut into cubes.
In a kadai, add remaining ginger-garlic paste, onions and saute. Add tomatoes, red chilly pdr, turmeric, salt, curry leaves and tomato puree. Make paste of coconut and cashew nuts and add to it. Cook well. Now add the egg cubes and let it simmer for some time. Add garam masala powder. Lastly garnish with coriander leaves.
