½ kg Bhindi, slit in centre (or chopped into small pcs)
Small onions 3-4
3-4 flakes garlic
1-2 green chilles slit lengthwish
1 tsp Jeera
For dry Masala
2 tsp coriander pdr
1 tsp red chilli pdr
¼ tsp amchur pdr
¼ tsp chaat masala
½ tsp turmeric pdr
¼ tsp hing pdr
½ tsp jeera pdr
Salt
2-3 tbsp oil
Mix all ingredients for Masala and fill in the slit of the bhindi. Also make slit in onions and fill the masala.
Heat oil. Add slit green chillies and garlic and saute. Now add the bhindi and onions. cook on slow fire. Keep it open while cooking to retain green color.
If cutting bhindi into small pieces, the masala powder may be sprinkled on the bhindi after bhindi is half cooked. Cook bhindi without lid to retain green color.
