Fruit Cake / Plum Cake
Flour 500gms
Sugar 4 cups
Eggs 9 nos
Soft white butter 300 gms
Baking powder 2 tsp
Tutty- fruity 150 gms
Dates – 150 gsm
Red cherries – 100 gms
Cashew nuts – 50 gms
Black Raisins 50 gms
Vanilla essence 2 tsp

- Beat the cream, butter and sugar until fluffy and smooth.
- Add eggs one by one, keep whisking.
- Now add essence and caramel and mix.
- Combine baking powder in flour and sieve it. Add dry fruits.
- Mix into the butter mixture and fold nicely.
- Grease the baking tray with butter and dust with maida.
- Put the cake batter into the baking tray and bake at 150 degrees.
- Remove from oven and leave it to cool down.
- Demould and slice the cake, dust with icing sugar.
This is Fruit Cake.

For Plum Cake, soak cashewnuts, badam, apricot, raisins, dates and skin of orange in rum or red wine for 2-3 weeks and add to the flour. Also add Caramel Color.  
Rest procedure is same.

To make Caramel color, in a pan add ½ tsp butter and 1 cup sugar and stir till sugar melts and becomes brown color, now add 1 cup water and mix well. Cool it. Take care while adding water, as it will splash in hot sugar mix.

This cake can also be made in a pressure cooker. Don’t put water in the cooker. Also, remove the rubber ring from the cooker lid. The batter should be put in an aluminum vessel greased with butter. Cook on slow fire for 30-35 minutes.
