Tomato Curry 

6 tomatoes

2 large onion

1 cup grated coconut 

1 tbsp ginger-garlic paste

1 tbsp cashew nuts 

2 tsp Kashmiri red chilly powder

1 tsp coriander powder

1/2 tsp turmeric powder

1 tsp tamarind

½ tsp sugar (optional)

Salt

Curry leaves

Corriander leaves

Oil 

Boil one onion and one Tomato, alongwith cashew nuts. Add coconut , tamarind and grind into paste.

Chop the onions and tomatoes.

Heat oil in kadai, add ginger garlic paste and saute. Add onions, curry leaves and saute.

When onions change colour, add the chilli powder, coriander powder, turmeric powder, salt and saute. Now add tomatoes and cook for 2-3 minutes. Add 1-2 cups water and let it cook for another 5 minutes. Do not over cook tomatoes.

Add the ground coconut and let it simmer on low flame for 2 minutes. Garnish with Corriander leaves. Serve with rice/rotis.
