Mixed vegetable Sabzi
500 gm vegetables, diced.
(potato, carrot, mutter, capsicum, beans, cauliflower)
50g Paneer (optional)
50g Babycorn (optional)
2 onions
3 tomatoes
Whole jeera – 1 tsp
Dhania pdr – ½ tsp
Red chilli pdr – 1 tbsp
Jeera pdr – ½ tsp
Garam masala pdr – ½ tsp
Salt, turmeric
Fresh Cream or Curd – ½ cup
Kasoori methi
Corriander leaves
Roughly chop onions and tomatoes; add some water and let it boil for some time. When cool, make paste of it and keep aside.
Heat oil in kadai and add potatoes, babycorn and carrots. Saute and close lid and cook for some time. Then add beans and mutter and saute for 5 minutes. Lastly add cauliflower, capsicum and saute. Add salt and mix well.
Make space in the centre of kadai by pushing the vegetables to the sides, so that oil collects in the centre. Now add jeera, ginger-garlic paste and saute. Add red chilly powder, dhania pdr, jeera pdr, garam masala pdr, haldi pdr and saute. Add coriander leaves and saute. Now mix it with the vegetable and saute. Now Add the ground paste over the vegetables and saute for some time. Add kasoori methi. Lastly add the fresh cream/or curd and mix well. Serve with roti. (Masala can be prepared in separate kadai also and added to the vegetable).
