Groundnut Laddoo

¼ kg groundnut

1 cup fresh grated coconut

¼ kg jaggery, cut into small pcs

¼ kg uncooked boiled rice (kolam ukada chawal. It is a variety of rice)

3-4 small cardamoms, powdered


Roast groundnut in kadai. Let it cool; then remove the skin.  Coarsely grind (without water) for 4-5 seconds before the oil starts seeping out. Keep aside. Roast rice in kadai till golden brown. Let it cool. Make fine powder it in mixie. Keep aside. Now, mix all the ingredients together, i.e. rice pdr, groundnut pdr, jaggery, coconut and cardamoms. Run this mixture in mixie for ½ minute so that the ingredients are fully blended with each other. Now make round laddoos out of this mixture.
