Omelette curry

3 eggs
4-5 tomatoes
4  onions
1-2 Green chilles, slit
1 tbsp Red chilly pdr
1 tbsp Dhania powder (optional)
1 tbsp Ginger-garlic paste
1/2 cup cashew nuts
1/2 tsp Garam masala powder
Coriander leaves, for garnish
Curry leaves

In a bowl add 1-2 cups water, 1 onion, 3 tomatoes (roughly chopped) cashew nuts and cook for 5 minutes. Let it cool and make smooth paste. 

Make omelette with eggs, green and onions. Cut into 1” pieces and keep aside.

Heat oil in kadai, add ginger-garlic paste and saute, then add 2 chopped onions and saute.When it browns,  add all the dry masalas and green chillies. Add chopped tomatoes, curry leaves  and saute. Add the onion-tomato paste, salt and saute.  Add water. When the masalas are cooked, add omelette pieces and blend well. Let it simmer for sometime. Garnish with coriander leaves. Serve with rice or rotis.
